Did I mention that I was cooking Moroccan for Easter? I worked so hard on it all and then took one lousy picture.
7 jewel couscous

These are just the jewels. The couscous wasn't made yet.
I would very much like to take the time to make interesting pictures.
We had turkey. A nice sized Tom that I've had since Christmas. Brined that bad boy and rubbed Garam Masala, cumin, ground coriander, a touch of cinnamon and salt all over him. Stuffed him with some cut up lemons and onions. This was cooked the day before, sliced and the carcass dumped in the soup pot for some killer soup later in the week. I'm obsessing over soup these days.
I made 2 salads. One was a eggplant based salad which is my absolute favorite. If it wasn't so time consuming I'd make it more often. As it is, way to much trouble for dinner. I should have taken pictures of this eggplant thing. It it enormously ugly. No, seriously! I didn't make a huge batch of it because I didn't think anyone would touch it. It was gone in minutes and everyone raved about it. And they were ALL surprised that it was eggplant. I wonder if I could can this.
The other salad was a carrot type salad seasoned with cinnamon, cumin and sweetened with sugar (date sugar if you have it and I do) you can add some chopped dates to it. It tasted good but wasn't so popular.
I found a wonderful mid-east market in OC and picked up fresh spices. Turmeric, Garam Masala, cumin, coriander and cardomom. They also had bakery fresh pita breads for under a buck. These breads, if you ever buy them, are $3-4 at the super market.
You serve these salads with warmed pitas.
