NaBloPoMo Pumpkin Truffles (Sarducci's)


I left very early for San Juan Capistrano yesterday to have brunch with client/friends and did not get back until very late in the afternoon. I almost missed the first day of NaBloPoMo! I'd have been very very bummed.

San Juan was beautiful! We went to Sarducci's and it was fabulous! It was a little cool when we got there and we wanted to sit outside and watch the train. It is right in back of the restaurant. There is a commuter train that runs regularly between SJC and San Diego so it got a little noisy from time to time. The had heaters so we were comfortable. I had an Alaskan eggs Benedict. With Alaskan crab on it, so so good. I've not gotten into the habit of taking pictures of my meals. I forget until I've already made a mess of my plate. Trust me though, it was pretty, it was delish.

And as with any outdoor eating establishment they had beggars.

This handsome fella was checking us out before while we were waiting for our friends. We only had coffee on the table and nothing to offer him. He left but didn't stray far. He knew grub would be coming eventually.
Several of his friends came by to see if we could spare a crumb or two. These birds were so friendly that they practically landed on us. They were not disappointed. Breakfast potatoes and toast for them today.

So that is why I almost missed my first day of NaBloPoMo.

So now, on to the recipe. Today ladies we have a recipe for a rich chocolate pumpkin candy. I hope to be able to try this one soon as it sounds pretty good.

ps: Sue! Look! No cooking involved! You could do this!

Rich Chocolate Pumpkin Truffles

2 1/2 cups Vanilla wafers, crushed
1 cup almonds, toasted and ground
1/2 cup powdered sugar, sifted
2 tsp cinnamon
6 oz chocolate chips (semi-sweet)
1/2 cup canned pumpkin
1/3 cup coffee liqueur (like Kahlua)
more sifted powdered sugar, sifted

Combine vanilla wafer crumbs, ground almonds, powdered sugar and cinnamon in a medium bowl.
Blend in chocolate, pumpkin and coffee liqueur. Form into 1" balls. Chill. Dust with powdered sugar just before serving.

Note: I thought Amaretto liqueur would be very nice in this. You could substitute juice, water or cream for the liqueur.
