NaBloPoMo Pumpkin Fritter

I've had this book for many many years. I've made many of the recipes in this book and I've enjoyed every one. This recipe for Pumpkin Fritters is very very good. I've not made it yet this year so I don't have a picture. Give it a try for a special weekend breakfast.

Pumpkin Fritter

1 egg
1/2 cup sugar
1/2 cup light brown sugar
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp vanilla
1 cup flour
1 cup canned pumpkin
1/4 tsp baking powder
oil for frying
powdered sugar

Beat the egg, sugars and salt until light and fluffy
Add the cinnamon nutmeg and vanilla. Mix well
Add the flour and pumpkin. Mix well. Add the baking powder.

Refrigerate the batter for at least 2 hours.
drop by tablespoonfuls into deep hot fat (375*) and fry 3 min. When the fritters rise to the top, turn them over. Drain on paper towels. sprinkle with powdered sugar before serving.
