I came home yesterday to find this.
These are so good. They are my favorite things to make with zucchini. Super duper easy.
Pita Breads! Yep, I made Pita bread! And it worked, and they were wonderful. And they were a little time consuming.
I had something in mind when I made them but I didn't get to the store. So I made garlic pita chips. Melt some butter with some nice olive oil and brush over pita's that have been cut into triangles. Sprinkle with garlic powder, salt, some dry parsley. Bake 350* for 10 min or so.

Zucchini Squares
3 c. diced, unpeeled zucchini
1 lg. onion, chopped
1/2 c. grated Parmesan cheese
1/2 c. salad oil
1 c. Bisquick
4 eggs, beaten
1/2 to 1 tsp. parsley
1/2 tsp garlic powder (or more)
1/2 tsp oregano or Italian seasoning
Dash of salt and pepper
Grease 9-inch pie plate or 9 x 9 square pan. Combine all ingredients.
Bake at 350 degrees for 35-40 minutes or until lightly browned.
I added 1/2 cup tomato because I had it, you could throw in some leftover corn.

Sorry about what the turtles did. They made a big mess. Where did you get them and how long have you had them?
I will have to try your receipes. They sound good. I like to cook. Especially desserts.
Looking forward to you posting some of your quilts. I think I saw a few of yours on your blog. My mom has made a few ancestory quilt. A tree with all the branches and leaves that have relative names on them. Really cool.

Hey! I've used a recipe very similar to that zuccini square one. It was caleed a casserole, but easily could have been coverted into squares. Good idea. And YUMMM pita chips!!
Oh, boy that food looks so very good. I love fresh pita bread but can't find it around here. I'm glad to see the turtles are keeping busy...just hate that they are causing you to have to clean up after them.
