NaBloPoMo Spicy Pumpkin

This looks a little unusual. It looks to be more like a chutney, sweet and sour sort of side dish. Maybe a little spicy if you like.


If you can't find whole pumpkins anymore you can use any hard winter squash.

SPICY PUMPKIN
Title: COLOMBO DE GIRAUMON (SPICY PUMPKIN)

Yield: 4 servings

1 Onion; finely sliced
1 or 2 Garlic clove, crushed
2 tsp Curry powder
3 whole Cloves, crushed
1/2 Red chili, finely chopped
1 lb Pumpkin*, peeled & cut in 1 inch cubes
2 Tomatoes, chopped
1 tbs Sultanas, golden raisins
1/4 tsp Sugar, optional
the juice of one lemon
2 tbs Oil
Salt & pepper

* the pumpkin in the recipe is not the pumpkin that we use for Jack O' Lanterns, it is the orange squash that is called "pumpkin" in West Indian groceries

First, heat the oil in a heavy pan and then add the onion. Saute until it is transparent and then add the garlic and cook that also. Next put in the curry powder, ground cloves, the chopped tomatoes, sultanas and sugar. Sprinkle the lemon juice over. Cover, and cook very gently for 30-40 minutes or until pumpkin is tender, stirring frequently to ensure that it does not catch. Season and serve to accompany main dishes and rice.
