NaBloPoMo pumpkin pancakes

Pumpkin Pancakes

Wake up to spicy Pumpkin Pancakes hot from the griddle! Serve with Pumpkin Maple Sauce and broiled grapefruit halves sprinkled with brown sugar and cinnamon for a winter time treat.

Yield: 8 servings

2 cups all-purpose flour
2 tablespoons packed brown sugar
1 tablespoon baking powder
1 1/4 teaspoons pumpkin pie spice
1 teaspoon salt
1 3/4 cups milk
1/2 cup Libby's 100% Pure Pumpkin
1 large egg
2 tablespoons vegetable oil

pumpkin maple sauce:
1 cup maple syrup
1 1/4 cups Libby's 100% pure pumpkin
1/4 teaspoon ground cinnamon or pumpkin pie spice

Optional: chopped nuts

Combine flour, brown sugar, baking powder, pumpkin pie spice and salt in large bowl. Combine milk, pumpkin, egg and vegetable oil in small bowl; mix well. Add to flour mixture. Stir just until moistened; batter may be lumpy.

Heat griddle or skillet over medium heat; brush lightly with vegetable oil. Pour 1/4 cup batter onto hot griddle; cook until bubbles begin to burst. Turn and continue cooking 1 to 2 minutes.

Repeat with remaining batter. Serve with Pumpkin Maple Sauce and nuts.

Pumpkin Maple Sauce:
Heat 1 cup maple syrup, 1 1/4 cups Libby's 100% pure pumpkin and 1/4 teaspoon ground cinnamon or pumpkin pie spice in small saucepan until warm.

LOW CARB PUMPKIN PANCAKES

1 large egg
1/2 cup pumpkin puree'
1/3 cup flaxseed meal
1/3 cup whey protein powder
1 Tablespoon butter - softened
1/2 teaspoon vanilla extract
2 Tablespoons sour cream
2 packets splenda or equivalent
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon baking powder
1/4 teaspoon baking soda


This recipe has about 14 net carbs per serving.

In a medium bowl, lightly beat the egg. Blend in pumpkin, butter, vanilla and sourcream.

In a seperate bowl, sift together all dry ingredients.

Combine wet and dry ingredients. Mix well.

On a lightly greased skillet or fry pan, dollop out about 1/3 cup of batter to make each pancake.

This makes about about 4 pancakes.



In other news, I'm moving. Although it is coming along nicely there is still so very much to do. Yesterday I moved the majority of my kitchen. I've found the temporary or permanent place for my dishes. Because, here's the thing. I'm not sure how this kitchen will work. Were would the best place to be for the everyday things like cups, dishes, silver, towels etc to be? I wont really know until we're all moved in and actually living with the stuff we need. I'm not very good at moving. I have to get some sort of handle on it because we'll be having Thanksgiving at my house. It'll be a hoot. I'll keep you apprised of the hilarity.

Yesterday a friend asked me what I liked best about my new house. I said, not much. I mean, it's bigger and that's good. I'll have my boys and pug with me and that is a happy happy thing but it has stairs and I hate, really hate stairs. It also has no back yard, well it has a very large back yard, a large back yard with no grass, trees or plants of any kind, but an abundance of dirt and rocks.

After I said it I realized how ungrateful I am. This being the month of thanks I am reminded of my tradition to list those things I am thankful for.

I am thankful and blessed to have this beautiful home to move into. I will have 2 of my boys with me and I've missed living with them so much. And Frank is coming to live with us and that is an awesome thing too!

Good luck on the move. Moving is rarely fun, and even less so when you are not terribly in love with the house you are moving into...

The pumpkins sound wonderful.
